The system provides a stable and constant Temperature (45-58F), a unique moisture level for specific cheeses (80-98%), and a necessary flow of fresh air to remove by-products of aging. This is an ideal solution for artisanal cheesemakers that can benefit from aging cheeses in the best possible environment.
